Classic Cheese Sauce
Introduction:
The classic cheese sauce made in the traditional style using Bladen cheese ensuring a quality creamy sauce that delivers a rounded cheese flavour profile to suit your needs, time and time again.
Use white Cheddar for a classic sauce colour or use the coloured Cheddar to enhance the presentation of the sauce. Try using a mixture of both cheeses this will create a different colour and allow you the opportunity to market your dish more interestingly
Using mature Cheddar will give a robust flavour with lots of personality due to the longer maturation process
Mild Cheddar will offer a more rounded and mellow flavour that is softer on the pallete
Ingredients:
| 500ml |
Whole Milk |
| 57g |
Butter |
| 57g |
Plain Flour |
| 3g |
Salt |
| Pinch |
Ground Black Pepper |
| 4g |
English Mustard |
| 227g |
Mature Cheddar |
Method:
| 1. |
Heat milk through |
| 2. |
Melt the butter in a thick bottomed pan |
| 3. |
Add flour and mix in, cook out on a low heat for 3-5 minutes |

Add milk gradually, stirring in to create a smooth sauce consistency |

Season with salt, pepper, and English Mustard |
| 6. |
Cook out sauce on a low heat |
| 7. |
Add grated cheese, stir in and cook until cheese has fully blended in the sauce |

Check seasoning and consistency |
| 9. |
Serve |
