"The Red One" Sauce

Introduction:

A delicious rich sauce using our award winning red Leicester cheese, finished with a little kick from the red chilli and pepper, nicely rounded with a dash of wine and swirls of cream. Excellent sauce with chicken, pork or vegetables

Ingredients:

15g Vegetable Oil
40g Sliced Red Onion
5g Finely Chopped Red Chilli
3g Chopped Garlic
130g Diced Red Pepper
30g Tomato Puree
210g Chopped Tomatoes
225g Water
5g Salt
4g Sugar
10g Red Wine
16g Cornflour/Starch
32g Water
175g Grated Red One Cheese
60g Single Cream

Method:

1. Heat oil through in a thick bottomed pan<
2. Sautee the garlic, chilli, onions and red peppers in hot oil
3. Add tomato puree
4. Add tomatoes and water
5. Cook out on a gentle heat and add wine, sugar and salt
6. Remove sauce from heat and blend using an electric blender stick or alternative
7. Mix cornflour/starch with water and thoroughly mix in
8. Return  the blended sauce to the stove on a low heat
9. Add cornflour/starch mix to the sauce gradually stirring at all times until the sauce begins to thicken
10. Add the grated Red Leicester cheese and stir in
11. Add the cream
12. Check seasoning and remove from stove
13. Serve with appropriate proteins or vegetables
