Skinny Cheddar Cheese Sauce

Ingredients:

43g Plain Flour
43g Cornflour
846g Water
110g Skimmed Milk
2g Powdered English Mustard (Non-fat)
Pinch Ground Black Pepper
3g Salt
200g Reduced fat cheese (grated)

Method:

1. Mix plain four, cornflour and water together to a smooth paste
2. Mix skimmed milk powder with 700gm of water and whisk in to dissolve
3. Using a thick bottomed pan, bring skimmed milk mixture to just below boiling point
4. Add plain flour, cornflour and water paste, gradually to the skimmed milk, stirring continuously to a smooth consistency using a whisk
5. Add mustard, salt and pepper and cook out the sauce on a low heat for 8-10 minutes
6. Add cheese to the sauce, fold in and cook out for a further 3-5  minutes
7. Check seasoning and taste
8. Check consistency
9. Remove sauce from the stove and serve
